Nubilum Distilling was born during the world wide lock down in 2020, cliche I know. I had been living in Melbourne only a few years and whilst I had friends scattered around Melbourne my local community became my new friends and family very quickly. I was unofficially adopted by my new babushka (Ukrainian), hermano (Colombian), barâdar (Persian) and madre (Italian). They kept me feed and watered, including sharing traditional drinks (some of which I don’t think came off a shelf). When the lockdowns lifted I was welcomed into their families and homes and found myself raising my glass alongside stories of the adventures that led them to Melbourne. Drink in hand I wanted to find a way to share their stories, the stories that made Melbourne. And whilst the road ahead wasn’t clear the idea was fermenting.
World over you will find distilled alcoholic beverages made from local ingredients reflecting the place and the people it’s from. You’ll find it behind names that may not have made your bar car yet; aguadente, raki, chirrite, moonshine or grappa. Traditionally these are made in small batches from the things around you and Nubilum is the same, small amounts of each unique drink inspired by the people you’d love to have a drink with and hear a bit more about.
Nubilum means cloudy and in a way confused; a story still waiting to be told; a drink with friends and family as the tale unfolds. So join Nubilum for a drink and hear a story. We can’t wait to hear yours as well.
